Baked Pumpkin Oatmeal

I tried out this wonderful new recipe for breakfast this morning.  My five year old, who LOVES oatmeal, absolutely went nuts over this dish.  I found this recipe after discovering Monica Swanson’s (THE GROMMOM) website, while listening to my favorite podcast God Centered Mom.


  • 3 cups rolled oats
  • 1/4 cup ground flax seed (option to add or use chia seed as well)
  • 2 Tbsp butter, mellted optional really)
  • 1 cup pumpkin puree
  • 2 eggs, beaten
  • 1/2 cup maple syrup
  • (Optional – add 1/4 cup agave nectar if you want it sweeter)
  • 1 1/2 tsp baking powder
